The Wedding Salon - The Roosevelt Hotel - New York










On Monday, November 2nd, I attended 4PM Events' exclusive bridal event - The Wedding Salon! It was held at the The Roosevelt Hotel in NYC and it was amazing. Beautiful gowns, incredible table settings, fabulous considerations for honeymoons, in short - a bride's dream! I only wished my daughter was with me to see the fabulousness! La Maison Du Chocolat-Paris was in attendance giving out samples of their premium chocolate (ooh la la - incredible!). There were breathtaking floral displays by Celebrate Flowers, and my favorite - CAKE!!! All hail gateau!!! Crumbs Bake Shop doled out bite sized cupcakes that simply melted in your mouth. Make My Cake Bakery and Cafe distributed generous sample sized red velvet cakes that were dense, rich and clearly - not from a mix! This was REAL cake - the kind they teach you to make in culinary school. Kudos! David Tutera, Bridal Guru, celbrity wedding planner and host of WE TV's hit show "My Fair Wedding" featured his special occasion dress house collaboration with Faviana. Stunning dresses from 0 to 24 (God Bless You for remember the tiny girls AND the big girls!) Solotu - Custom Made Bridal House was there offering the bride to be an opportunity to have a one of a kind gown. Fabulous! It was a wonderful event, and gave an awe inspiring look into the wedding business. I often get so "caught up in the cake", that I forget what elaborate feasts for the eye a wedding can create! - Check out some photos from the event.

Happy Birthday Marty!!!




To celebrate Marty's birthday, I baked a Butter Pecan Cake filled with Caramel Buttercream, topped with Coconut Pecan Frosting. The cake is sided with vanilla and chocolate filled wafers, tied with a satiny gold bow! He also got cupcakes with the extra batter! (ps...I wouldn't let him eat it until I took the pictures of it!)

Sugar Paste Bouquet & Royal Icing Basket


Believe it or not, the royal icing "wicker basket" was more time consuming than the creation and accumulation of flowers. I have set a personal goal to create a different set of flowers each week - it keeps the skill level up and amasses an amazing ready made array of flowers to use when the next order comes along. I wish I'd started this along time ago! A la prochaine!

This cake is a dessert I made for a recent dinner party for new friends. The cake base is genoise (French sponge cake), topped with white chocolate mousse (Guittard) and topped with peach slices secured in an orange flavored gelatine.

Poppies, Poppies, Everywhere!!!







I had the urge to create some sugar paste poppies, buds and bracts. After creating a tray full of these colorful flowers, I was compelled to put them on a traditional wedding cake. This reminds me of a fun, outdoor summer wedding.

Miniature Chocolate Heart Cake

Here's a sneak preview of some of the desserts I've been working on. This is a velvety smooth chocolate cake, covered in chocolate ganache, topped with a fresh strawberry.

That's right...I've been taking classes on Food Safety and Handling. Just when I thought I knew everything about handling food, along comes ServSafe. I now know every pathogen that can cause you harm and the steps to prevent it. My OCD about cleanliness has taken on new proportional heights. Sigh. Hand sanitizer anyone?
